Snapshot Serengeti
This website is really easy to navigate and they provide great images and descriptions to help you correctly identify the animals in photographs.
Project BudBurst
Look for leafing, flowering, and fruiting of local plants and input your observations to their database.
The Cornell Lab of Ornithology YardMap
Although this site might be difficult for fifth graders to do on their own, it's a good family-involvement project.
IceWatch USA
This project is great for winter. Choose a location to observe over the course of the winter, like a nearby lake or river. Record your observations and report your findings.
Not Citizen Science, but worthwhile projects:
The Humane Backyard program by the Humane Society or Garden for Wildlife by the National Wildlife Federation are great resources for taking on your own action project to improve our urban environment for wildlife.
